Designed as a batch pre-mixed that's loaded with the tastes of the holiday season, which makes it ideal for your holiday party. Reserve the remaining citrus syrup for morning drinks, desserts, or to mix additional servings of bikinis.
Bikini
Makes enough for 10 servings
To make the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
For the Drink (produces 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
Making the Syrup: Combine all the items into a saucepan, heat until it reaches a light boil, mixing so the sugar melts. Next, take off the heat and let it to reach room temperature fully. Transfer into an sterilised bottle, seal keeping it in the fridge, where it will keep for around one month.
To make Cocktail Base: Pour every liquids into one sizeable container, allow it to infuse for an hour, then strain best through muslin, so it's perfectly clear.
For serving: Add 85ml of your premix into your stirring glass packed with ice, and stir gently for about 60 seconds to cool it down. Filter to a frosted cocktail glass or equivalent, garnish with the cranberries and complete it by giving it a light spray of mandarin oil above the glass.
